Even though this wine was intended to be a ‘col fondo’, during fermentation we realized it had a great balance. That’s why we took a step back and decided to bottle it without bubbles, as a still wine—or ‘tranquillo’ as it’s called in our parts. We believe our role is precisely to let the grapes and the territory express themselves, and sometimes courage means taking a step back and changing your mind. The wine fermented spontaneously, was not filtered, and only a minimal amount of sulfur was added at bottling. Bottled, as per tradition, in a Rhine bottle, this wine represents the white wine of the past—light and easy to drink, for those who, like us, suffer from thirst. Hence the name “Questo non è” (This is not), a wine banned for its great desire for freedom.
